1 medium sized mackerel
3 medium sized tomatoes
2 medium sized red onions
Juice of one whole lemon
1/2 bunch of parsley
1/2 tea glass of olive oil
1 dstspn. of thyme
1 tsp. of red pepper flakes
Salt, black pepper
Gut and clean the mackerels. Drain and marinate for an hour in thyme, salt, black pepper, lemon juice and olive oil.
Coat the baking tray with oil. Thinly slice onions and tomatoes in rings and place in a tray. Add finely chopped parsley on top. Put the marinated mackerels in the tray and add the rest of the onions, tomatoes and parsley on top. Pour olive oil and sprinkle red pepper flakes. Bake in an oven at 180-200 °C. Serve hot.
